The thing I miss most on my gluten-free diet are cupcakes. After dinner I made some gluten-free vanilla cupcakes with vanilla frosting. The thing about gluten-free cupcakes is the weird mouth-feel. They’re kind of spongy and mealy, like cornbread. I guess they tasted OK. At least the frosting was good. I probably should’ve just had a beer instead, but isn’t beer like drinking a loaf of bread? Damn you gluten protein!
